A double shot, 20 g real cocoa syrup, 150 ml milk — not a pump of brown perfume

You will make a café mocha: espresso or very strong coffee, a small homemade chocolate syrup (cocoa + sugar + water), steamed or heated milk. Cocoa powder, not a mystery pump. If you don't have a machine, a moka pot or a short Americano still works.

Glossy cocoa syrup. Not a dry powder dumped in milk.
0130 g cocoa, 40 g sugar, 80 g water, pinch salt

Whisk in a saucepan over medium until it barely simmers and looks glossy, 2–3 minutes. Cool. Fridge a week in a jar.

Dutch cocoa is milder; natural cocoa is sharper. Both work. If it's paste, you boiled it too long — splash of water.
