You will pull a double espresso, steam 150–180 ml of milk to 55–65°C with paint-like texture (not a foam volcano), and pour it into the shot so the drink is one thing, not coffee with a hat. This is a café latte, not a cappuccino and not a microwave mug.

  • The drink you are makingA latte is espresso + stretched milk in a roughly 1:4 to 1:6 ratio. Not a cappuccino (drier foam, smaller cup) and not a flat white (less milk, denser).
  • The shotPull it while the pitcher is still cold. A dead shot under pretty milk is still a dead latte.
  • Steam: stretch, then rollTwo phases. Stretch (air in) for 3–5 seconds, then bury the tip and spin until the pitcher is hot. That is the whole skill.
  • Pour and tasteStart high to mix, then bring the pitcher close to draw a blob in the center if the texture allows.

01One double, one small pitcher

Target: 36 g espresso in the cup, then 150–180 ml milk. A 250–300 ml cup is the right size. A giant mug turns this into warm coffee-milk and you will never learn the texture.

Weigh the milk into the pitcher cold, straight from the fridge. Fill only to the bottom of the spout — overfilled pitchers cannot roll.

Whole dairy is the training-wheels milk: fat makes it sweet and the foam holds. Barista oat works if it says barista on the carton; regular oat splits into soap.

UHT milk can foam, but it tastes cooked before you start. Fresh whole, 3–4 days from the date, is the easy win.
