
You need three categories from one shop trip. Jam fruit: 600 g berries — mix ripe and slightly underripe; underripe has more pectin. Salad fruit: 500 g firm things that hold shape — apple, grapes, kiwi, orange segments, pomegranate if it is in season. Juice fruit: whatever is soft, overripe, or will be trimmed — soft berries, melon ends, apple cores without seeds, citrus membranes.
Write the split on your phone before you shop so you do not buy 2 kg of strawberries and wonder why you have no salad. One lemon minimum; you want two for jam acid and salad dressing.
Pro tip. Shop the reduce rack for juice fruit — soft bananas and bruised peaches blend fine after you cut away the bad spots.
