01Prep pans like you mean it

Grease, line the bottoms with parchment, dust with flour, tap out the extra. Weigh the batter into the two pans so they match. Bake at 175°C / 350°F until a toothpick has a few moist crumbs — not wet batter, not bone dry.

Cool 10 minutes in the pan, turn out, cool fully. Wrap and refrigerate 1 hour. Warm cake shreds when you frost it.

Serrated knife, cake on the turntable, blade level with the equator. Rotate the cake into the knife. Do not press down.

If a layer domed a lot, your oven runs hot or you overfilled. Keep the scraps for snacks. Stack the flat faces.
