Banana Bread That Tastes Like Banana

Black bananas, 300 g mash, one loaf, no 'healthy' cardboard

1h 20m5 photographed stepsBeginner

You will mash very ripe bananas, mix a one-bowl batter, and bake a loaf that is banana first, cake second. Black-speckled fruit is the ingredient. Yellow bananas are a different, worse bread.

What you'll learn

  • Black bananas mash sweet; yellow ones taste like flour
  • Don't beat the flour into glue
  • 175°C / 350°F until a toothpick is almost clean, 50–65 min
  • Cool 15 minutes in the pan or it welds to the tin

Black skins, 300 g mash. Yellow fruit is homework for next week.
01300 g mashed, lumpy is fine

Peel, mash with a fork. A few lumps beat a puree. Weigh if you can — '3 bananas' is a lie when they range from 80 g to 200 g.

Frozen-thawed black bananas weep liquid. Mash it all in. That's flavor, not a problem.
