You will make about two 250 ml jars of strawberry jam: macerate, boil to the wrinkle test or 105°C / 221°F, jar hot, invert or water-bath if you are storing in a cupboard. This is a weeknight batch, not 12 kg of pectin science.

01Hull, halve, weigh

1 kg after hulling. Halve big berries, leave small ones whole. If they smell like nothing, they will jam like nothing — add 50 g extra lemon juice and accept a softer set.

Toss with 700 g sugar and lemon juice in the pot. Rest 30–45 minutes until a syrup forms. This is macerating. Skipping it makes undissolved sugar and a gritty boil.

Wash jars. Keep them hot so hot jam doesn't crack glass. Lids per the manufacturer — most modern lids are simmered, not boiled to death.

A plate goes in the freezer now. That is your wrinkle test, not a vibe.
