Sharpen a Kitchen Knife

A whetstone, 15°, burr on both sides, then the steel is just maintenance

45 min5 photographed stepsBeginner

You will sharpen one chef's knife on a whetstone: soak or splash as the stone requires, hold a consistent low angle, raise a burr, flip, refine, then strop or steel lightly. This is how-to for a dull knife you already own — not a $400 Japanese ritual.

What you'll learn

  • The stone must not skate
  • Angle: about 15–20°, consistent beats 'perfect'
  • A burr means you actually reached the edge
  • A honing steel does not replace a stone — it realigns a still-sharp edge

Inside this course

  • Stone on a towelA sliding stone is a trip to the sink with a cut.
  • The angleTwo stacked coins under the spine is a rough 15° on a typical chef's knife — then muscle memory.
  • TestPaper slice or tomato skin. Your thumb pad is a bad test.
  • The steel is maintenanceA few light strokes at the same angle, not a sword fight.

First steps from Stone on a towel

See how every step looks — photo, checklist, and pro tips included.

Stone stuck on a towel. Water, not oil, unless it's an oilstone.
01Read the stone. Soak if it says soak. Splash if it's splash-and-go

Many 1000-grit stones soak 10–15 minutes until bubbles stop. Diamond plates: splash. Don't mix oil into a waterstone.

Damp towel, stone on top, low table. You need to see the bevel. Elbows in. Not a heroic stance.
