Do not add 500 ml of stock to the pan at the start. You will braise, not roast, and the skin will stay flabby. A splash (2 Tbsp) of oil on the bird is enough liquid at minute zero. Wine or stock goes in after, for the sauce, when the bird is resting.
Pro tip: Dark roasting pans brown faster than shiny disposable foil. If you only have foil, give the 220°C start the full 20 minutes and do not skip the thermometer.
