No overnight window: salt the same 12 g, set the bird on the counter (cool kitchen) 45–60 minutes while you cut vegetables and heat the oven. You get seasoning through the outer meat. You do not get the same parchment-dry skin. Still roast it. A late Tuesday bird is better than a cancelled dinner.
Do not try to 'catch up' with extra salt at the table by dumping 2 Tbsp on at the last second — that crusts the skin and leaves the interior bland. Oil (1 Tbsp) and pepper go on just before the oven so they do not burn during the 220°C blast.
Pro tip: If the kitchen is above 22°C / 72°F, keep the salted bird in the fridge for that hour instead of on the counter.
