Free everyday life tip: Season and arrange the sheet pan (step 5 of 13 from "Meal Prep Sunday: Five Lunches in One Hour").
Cut the chicken thighs into 2 cm cubes — uniform size means uniform cooking. Toss them with 1 tablespoon of olive oil, half a teaspoon each of salt, garlic powder, and smoked paprika. Spread them on the left two-thirds of the sheet pan with space between the pieces; crowded chicken steams instead of browning.
Cut broccoli into small florets and slice peppers into strips. Toss the vegetables with another tablespoon of olive oil, salt, and pepper. Spread them on the right third of the pan. If your vegetables and protein have different cooking times, put the slower item closer to the back of the oven where it is hotter. Slide the pan in and set a timer for 20 minutes.
You'll need
- Chicken cubed to 2 cm
- Protein on left side of pan with spacing
- Vegetables on right side
- Timer set for 20 minutes
